Thai Fishcakes

My girlfriend just gave me this recipe .... Sounds yummy!

They're really easy to make and easy to adapt too for anyone who doesn't want them too spicy.

450g skinned firm white fish - cod, haddock, monkfish, hake, pollack etc
45g rice flour
1 tbsp fish sauce
1 lightly beaten egg
3 tbsp fresh coriander chopped finely (think its called cilantro over there!)
3 tbsp red curry paste
1-2 red chillies finely chopped - optional
100g green beans thinly sliced
2 spring onions finely chopped
1 tbsp oil
sweet chilli sauce for dipping

1. Roughly chop the fish and whizz in blender for 20 secs or until fairly smooth
2. Add rice flour, fish sauce, egg, coriander, curry paste and chillies and whizz again for 10 secs until combined
3. transfer to a bowl and add chopped beans and spring onions
4. with wet hands shape into patties, approx 2 tbsp each patty
5. Heat oil in a non stick fry pan and fry gently for 3-4 mis each side until golden.
6. Drain on paper towels and serve with sweet chilli dipping sauce

If you need to make some spicy and some not just leave out the chillies until last then divide the mixture and add chillies to just one batch.
I often use the blender to chop the beans and onions so they're finely chopped without the hard work! (In fact I often mix them in with the blender rather than in a separate bowl - just means they're chopped a bit finer and one less thing to wash!!)

They always go down well with everyone here, tonight we had them with steamed veg and homemade potato wedges but they also go well with a nice big salad and steamed rice. Make mini ones for a starter!
