Pennsylvania Dutch Macaroni Salad

Mom's Pennysylvania Dutch Macaroni Salad
(Directions for Potato salad in next post)


Ingredients:
    Elbow macaroni, cooked as directed
    Mayonnaise (Not Miracle Whip), enough to coat, maybe a couple heaping Tablespoons
    1 large carrot, diced small
    1 celery stalk, diced small
    2 hard boild eggs, chopped
    1 can tuna
    Paprika (optional for garnish)


Cooking Directions:
Mix together the first six ingredients. Sprinkle with Paprika for color. Chill at least one hour.

Chef's Notes:
For my husband I use chicken instead of tuna, but there's a huge difference in the taste. I prefer the tuna. This is one of those family recipes that isn't written down. I add mayonnaise until it looks right.

Mom's Pennsylvania Dutch Potato Salad

For this recipe, follow the directions above but use cubed, boiled red potatoes instead of macaroni. Sometimes I add celery salt.
