Ordinarily, if there is sufficient pot roast left over, I will make barbeque with it. This week I had enough, but the day before had made chili so really didn't want to have back to back days of 'tomato based' dinner.

I researched and found a rather interesting way to use up the pot roast - Hash beef !!



Ingredients:
Leftover pot roast
Approx 3 cups of gravy (again leftover but you could use beef stock)
5 large Yukon gold potatoes, peeled and diced
Small onion diced
garlic (small amount)
S& P (to taste)

Combine all the ingredients into a shallow pan, cover with foil and put in the oven 375 for about 45 mins.
(time to cook the potatoes)

DONE!

I didn't add veggies to it, but served them on the side. This was incredibly easy and very filing.
