Buckeyenuts Meatloaf

Meatloaf Ingredients:
    1lb ground beef (not chuck or round)
    1 egg slightly beaten (I buy cage-free brown eggs)
    1/2 cup chopped green pepper (mom makes me do this - she puts it in everything)
    1/2 cup chopped onion (I prefer sweet or Vidalia in season)
    1/2 cup quick oats
    8oz can of diced tomatos with the juice (I buy salt-free when I can find them)
    1 tsp salt
    1/2 tsp fresh ground pepper
    1/4 tsp garlic powder

    Topping:
    1/3 cup ketchup
    1tblsp mustard
    3 tblsp light brown sugar

Preparation:
Mix all ingredients (topping in a seperate bowl) together thoroughly and set in loaf pan prepared with cooking spray. Be sure and "tap or push" the meatloaf into the pan well so it doesn't cook too loosely.

Spread the topping onto loaf.

Cooking Directions:
Bake in preheated (a must!), 375 degree over. Some say to cook 60 minutes. My family likes meatloaf well done and I cook it for 90 minutes.

Chef's Notes:
Serve with a tossed salad, homemade mashed potatoes and green beans. It doesn't get any comfier than this!! :P

We add Italian sausauge to ours. The recipe we use calls for 1.5 lbs....so we normally do 1 lb of beef and 0.5 of IS.

I had it this way in a restaurant in Miami and loved (not remembering the name).

Had the meatloaf yesterday. It was real good! Wish I had doubled up on the recipe for meatloaf sandwiches today. They ate it all!

I didn't get to add the green pepper because of my daughter. But I'm with your mom...I love green peppers :wink:
