Beer can Chicken

Beer Can Chicken
You will need:
1 whole 4-5 lb chicken
extra virgin olive oil
rub
1 can of beer
tooth picks and or skewers( 2-4)
An oven preheated to 350 degrees with the rack on the lowest level.


Lets get started
1 Pull all the extras out of your whole 4-5 lb chicken and wash it inside and out and dry with a paper towel.
2.Lightly brush the entire chicken with virgin olive oil and sew the neck hole shut with tooth picks or skewers.
3.Using your favorite rub for chicken use any kind you like, mine consists of equal parts of the following unless otherwise mentioned. 1 tablespoon of the following, brown sugar, chili powder, sweet paprika, cumin and salt.
4.Using your favorite brand of beer, drink (or remove) about 1/3 of the beer form the can.
5 Rub the oiled chicken completely with the rub and pour the remainder of it into your beer. Be careful, the beer might fizz a bit.
6 Insert the beer can into the cavity of the chicken and place on a roasting pan so the can and the legs form a tripod. You may need to pin the legs to insure it will stand during cooking.

Place the whole thing into a 350 degree preheated oven for between 1hr 40min and two hrs or until it's between 170 to 180 degrees at the thickest part of the breast.

When finished cooking, remove and let stand for about ten minutes, slice away the hard burnt skin and enjoy one of the best chickens you will ever have.

Just to verify ..... You actually put the BEER and the Can in the cavity???????

I seperate the skin from the chicken and put the rub on the meat.

My sister does this on the grill. While it's definitely tender and juicy, I don't like the flavor (perhaps its the seasoning she uses)
